Maybe check out Misfit Diamonds and shoot them a message. They’re on Instagram and their cutters do a lot of interesting cuts and they curate a lot of interesting diamonds. If you have a particular jeweler you want to make you a ring with the diamond, a lot of times they’ll make a custom ring with your stone. Misfit Diamonds also has a list of metalsmiths that use their diamonds in their work and that may be worth checking out too.

I have a star shaped ring. It’s a circular diamond in the middle and then a bunch of smaller ones around it. The prongs make them look pointy, like a star or snowflake, but they are just tiny round diamonds. It’s not the same as your examples, but I think it could be done (not a jeweler though).
I don’t have anything helpful to add but I saw someone on twitter back in the day posting an engagement ring with this shape stone and I replied saying it was gorgeous and I wanted to know where I could buy this kind of ring and they blocked me. I’m still salty about it. Like you when I tried to google it myself it seems these star cut stones are mostly all CZ.

I think it would make for an excellent unique ring!
Avoid prongs and just go for a bezel!!
Those points on the star will scratch you, catch hair, chip off and the chips will be even sharper, etc.
A bezel will be far better, and a good handmade jeweler could fabricate one or you could CAD it.
Prongs are just a recipe for disaster

I’d go for one in a bezel, maybe a bezel with milgrain and some stones around it for fun, like trillions or kites.
Babe, what you need is a solid custom jeweler.
I will always sing the praises Sarah at Crane Jewelers in Seattle, but I’m not sure how much custom she does any longer. You could ask on their website, I’m sure.
But there’s hundreds of fantastic custom jewelers who can help you design the ring in a way you love, set reasonable expectations for care and durability, help you source the stone(s), and deliver a stunning ring of your dreams. It may not be as expensive as you think. I originally found Sarah on Etsy while looking for local jewelers – I loved her work and her price point, so I reached out and asked if she did custom. She did, and I’m still pleased as punch 5 years later.
Bezel is really youe only option for a star cut.
Have you considered pentagon and trillians?l to make a star? I know you said you didnt like kites, but this option may look nicer to your eye.
You’d have to buy one of the star cut Diamonds you’ve already found, then find a company you want to work with and mail them the stone to be set in the custom ring. I will absolutely agree that this stone will be FRAGILE and you may want to buy 2 or 3 Diamonds of the exact same size so you can have spares just in case the Diamond does end up getting damaged. Have you considered just 5 triangle cut Diamonds placed around a round or even a custom cut pentagonal center stone? That would give the same look but might be more durable, it might also be the exact same amount of risk for the exact same reasons, I don’t really know, I’m just trying to spitball ideas with you.
Edit to add: I do know of an AliExpress seller who has started cut Moissanites right now. Maybe you could do a trial run with a Moissanite ring to see how it goes and then you can go for the Diamond once you see how it’s going to be with a Moissanite…

There are overseas vendors that cut lab diamonds to order. I’ve seen some insane diamond cuts in my time (why anyone would choose to have a horse head diamond still baffles me) so it is absolutely feasible. You’ll definitely pay more than you would for an equivalent quality diamond in a standard shape, but that is to be expected with a more complex design.
I would recommend going for a “fatter” star shape if possible. Diamond may be the hardest gemstone but it is not the toughest and will chip or even cleave if hit in the wrong spot. Having wider “arms” will help a bit.
